The lamb shoulder is cut from the forequarter. It is most suitable for long, slow, cooking to tenderise for tender, moist results.

Leg of Lamb is perfect for a Sunday roast.
Only the two hind legs produce the cut referred to as “leg of lamb”. It is a large, lean, tender cut which is usually roasted.

This mini loin roast is perfect for a Sunday roast dinner accompanied with seasonal vegetables and stuffing. To get that perfect, crunchy, crackling crust, coat the fat with olive oil and rub with salt. This loin roast is simple to cook and easy to carve!
Delicious Pork Shoulder Roast, sourced from British farms.
Pork Shoulder is a quality cut of juicy, meaty pork with a rich marbling, making it perfect for slow cooking. Drizzle the skin with olive oil, rub in your favourite flavours and pop in the oven for a good few hours; when happy with tenderness, pull apart to make the perfect pulled pork.
Prime Rib Roast (1.5kg) sourced from QMS assured farms.
Cut from the rib area of the beef, this is a deliciously tender piece of meat. The bones have been removed for ease of carving. These roasts can be cooked using the traditional method of roasting at a high temperature for a few minutes, then reducing the heat, finishing the cooking at a lower temperature, giving a beautiful crispy crust with a tender rare/medium centre. Serve with roast potatoes and Yorkshire puddings.

Ribeye Steak from Quality Meat Scotland (QMS) Assured Farms.
Ribeye steaks are cut from the rib section of the beef and get the name ‘ribeye’ from the hole where the bone has been removed. These cuts are generously marbled which gives them a distinct flavour. Ribeye steaks are traditionally matured, adding to their exceptional flavour. Great for quick dishes and best done rare or medium for optimum succulence.
